To start us off, what is cheese? Cheese is the solidified form of a protein commonly found in milk called casein. In fact, in order to coagulate it, or curdle, an acidic enzyme is added.
If one must say what the process of making cheese is, you should probably remember these three simple steps.
Separate solid curds and liquid whey. This is usually done through spoiling the milk. It can also be called souring or acidifying. Most acids used in this process are vinegar or rennet.
Solidifying. Most cheeses will actually be complete after this process. By draining the water, it becomes a soft gel that ends up getting packaged and shipped off. Another way to get rid of the water is by adding salt. This also increases their taste.
Aging. While soft cheeses can be delicious on their own, most cheese is left to ripen by being stored in careful environments and watched thoroughly to make sure they don’t spoil completely. The long wait intensifies the flavor and makes the cheese harder.
The origin of cheese is rather mysterious. Some believe that an Arabian merchant stored his milk in a bag made from a sheep’s stomach. The rennet lining the stomach curdled the milk and the merchant enjoyed the taste.
