You just read that one wrong. The ability they give is one use hence “this ability” while the Minstrel’s empower is infinite.

Nature’s Healing (Night) - Heal a player from attack, nightshade, or bleeding. If you successfully heal them from nightshade or bleeding, they will be immune to it for the rest of the game. - Infinite uses

Offset (Night) - Partially heal a player from nightshade or bleeding. The effects of the status will be delayed by two nights.

Why would someone ever use Offset when they could use Nature’s Healing?

Multiple things can bleed/poison same day. Some things might be one night so they offset it and do something else

Or they can just delay a heal till end game giving them basically 2 free nights
